Peach-Cheese Toast

Wash the peach thoroughly. Cut and make an X into one side of the skin.

Put the fruit (X side down) onto a small shallow sauce pan which contains an inch of water.

Simmer the peach until it turns soft.

Remove the skin and the peach stone.

Mash the fruit until the texture is completely smooth. Stir in the cottage cheese and combine thoroughly.

You can either use the mixture as a dip or as a spread for the toasted whole meal bread.
Scrambled Egg Yolk

Separate the egg yolk. The egg white you can set it aside for later use in other family dishes.

Use a fork to beat the yolk gently. Stir in the milk.

Heat the olive oil in a small frying pan and pour in the egg yolk. Cook the scrambled egg until it is fluffy and golden brown.
